An Intro to my Diet Plan

On my birthday, at 4am, my boyfriend brought up my favorite ice cream cake and sang happy birthday to me! After serving me a slice, he pulled out a ring and proposed! I am so excited to begin my life with him and I want to begin our new life with a renewed self image. So, here I am, one of those brides, getting in shape for her wedding!
This page is as much to keep myself accountable as it is to help other brides on their journey (or those who just want some down to earth, friendly dieting tips) I am not an expert (although, sometimes I feel like one), these are just lessons learned from my experiences.

Recipes

New White Chocolate Covered Strawberry Smoothie!
Try this new super easy smoothie on a hot summer day!

Ingredients:
Frozen Strawberries
Skim Milk
Torano Sugar Free White Chocolate Syrup

Place a handful of frozen strawberries in your blender, add a cup of milk and a tablespoon of syrup (a little more to taste is ok!) Blend and pour!  Super easy and super delicious!  Add 1/4c of fat free plain yogurt for a creamier smoothie or try different flavored syrups available from Torano if white chocolate isn't your thing. 

 







My breakfast Day 1!  A delicious start to a vigorous diet week!  This is a light version of eggs benedict and is quite easy to put together!

Ingredients:
1/2 English Muffin (I recommend Thomas's Better Start Light Whole Grain with 8 grams of fiber)
1 egg - separated
lemon juice
dash salt/pepper
Spinach
1-2 slices turkey (I like Oscar Mayer Deli Fresh Smoked Shaved Turkey breast)
1 tbs Smart Balance Light butter substitute


Toast English Muffin
In shallow pan, steam spinach with dash salt and pepper and set aside.
In a shallow metal bowl mix egg yolk, splash water, dash lemon juice and dash salt
In medium saucepan simmer water to just below boil.  Place bowl of yolk mixture over and briskly whisk till light.  Add butter substitute and whisk until sauce slightly thickens and appears smooth and even.  If it gets too thick, add a splash water and mix again.  Remove from heat immediately once it reaches desired consistency.
In same slowly simmering saucepan slowly poor egg white into water, half submerging bowl it is in while doing so.  Simmer until firm and remove with slotted spoon.
Take muffin and stack turkey, spinach, egg then top with hollindaise.  Serve remaining spinach on side.



Tuna Salad Recipe:
4 oz. Canned White Tuna in Water (it is important to make sure it is not in OIL!!)
1 tsp Kraft fat free mayo
dash lemon, salt and pepper to taste
Added to texture (and tastes great) chopped celery
